So recently OneDrive has started popping up on users desktops saying that they need to backup their files to help prevent losing them or something. Very annoying and something we don't want. We put out a notice telling people to ignore it but many haven't listen and agreed to OneDrive to automatically backup their Pictures, Documents, and Desktop. We DO NOT want this to happen and I am hoping somebody can help me create a report that lists the computers that are currently set to backup these folders so that we can go in and individually fix it.

Not sure if this would help but have you looked at registry scanning and looking for the keys in this article - https://docs.microsoft.com/en-us/onedrive/use-silent-account-configuration
Looks like the settings are stored here : HKLM:\SOFTWARE\Policies\Microsoft\OneDrive
