Gray PC icon

In my LAN I set one PC as "DO NOT TO SCAN" (yesterday afternoon); I have restarted lansweeperservice, too (I knew it was no necessary but ...).

I was aspecting to see the number under the gray PC icon change to one but today it's still at zero: what's the matter?

The gray PC's mean that you changed the status of this pc in the custom fields from "active" to something else (non-active)
If you add it to "do not scan", lansweeper will just ignore the computer when it is added to the scanning queue.
