We are looking to user Lansweeper across a couple of departments, however, we would need it so when a user raises a ticket on the system, they would be forced to choose a type and not have a default of say "IT Support".
Is this possible?

There is no option to really force a user to select a ticket type. What you could do is create a ticket custom field which requires the user to confirm they have selected the right ticket type.
