I have about 10 different ticket types I use on a daily/weekly basis and I don't want all of them to show up on the end user dashboard in the "My tickets" list. How do I limit or even remove that box from the dashboard for end users?

You can hide certain ticket types from users by going to Configuration\Ticket Content. In the Ticket Types section, go to the Show Different Type To Users column. For instance you can select IT Support in the dropdowns for all ticket types. After doing this users will only see the IT Support ticket type.
