I'd like a report of tickets made in the last month excluding all tickets started by 4 different email addresses. Also the same for closed tickets in the last month. My manager, myself and some service accounts create the bulk of the helpdesk tickets and I'd like to see how many are created by users.

Try using and modifying the following built-in reports:

  • Helpdesk: Tickets created this month
  • Helpdesk: Tickets closed in last 7 days

To exclude results form specific email addresses you can add a where clause for the htblusers.email.
Where htblusers.email not in ('email1','email2', 'email3')
For the closed tickets you can simply set the number of days from -7 to -30. If you really need specific months, a datepart function might be needed.
