I have a bunch of windows servers that are getting RPC failures but when I use the "Devicetester" the SNMP string works.

How can I make these machines use the SNMP string rather than the tiring to use the windows credentials.

You cannot. SNMP is not used to scan Windows computers. To resolve RPC errors, you need to either reconfigure your firewall or scan using the LsPush scanning agent.
