When trying to change the asset type of a server, laptop, desktop from windows to server, desktop, laptop, it is grayed out and does not let me change it. or if I mass edit it receive the error

As the error indicates, Lansweeper does not allow a Windows computer's asset type to be changed, as this could cause unexpected scanning behaviors. This information can also be found in this article which provides more information on how to change asset types.
In case you want to group assets based on being a Laptop or Desktop we recommend using a Static or Dynamic asset group. More information on how to group assets can be found in this article.
