Why do email alerts get sent to test@test.com. I don't see any way to adjust this.

In regards to your question: email alerts are sent to whichever email addresses you submit under Configuration\Reports & Alerts\Email Alerts. There's no email recipients in there by default. More info on setting up email alerts can be found here.
