Whats the best way to track or "offline" assets

What is the best way to track all the "spare stuff", IE: stuff in the stock room, mice, keyboards, ram things of that nature.

I would recommend importing these assets with the CSV import feature. You can set the appropriate asset state (spare, stock...) within the import file and create your own asset types (mouse, keyboard...) in the Configuration\Website Management\Asset Mapping section of the console.
