Some of the dates on my new installation are showing in US format (mm/dd/yyyy) as opposed to my local (UK) format (dd/mm/yyyy). Is there any way to change this?

You need to do this on the lansweeper website server.
And use "iisreset" to restart the web server.

Changed all sShortDate in HK_USERS\<S-1-....>\Control Panel\International to dd/MM/yyyy and restarted the Lansweeper service and dates still show in MM/dd/yyyy
