When users reply to a helpdesk case, I would like to find a way to exclude extra lines (email signature, etc). I realize that there is a line saying "### Everything above this line is added to your ticket ###" but the email header and signature goes above this and we can't expect users to keep deleting these manually.

Automatically stripping user signatures from incoming emails is not possible and not something that could reliably be implemented. The problem is that the Lansweeper service can't easily know what is a signature and what isn't. To the human eye it's obvious, but to an automated procedure it's not. Unless your users were to uniformly format all of their signatures, which is unlikely, the service wouldn't know what parts of the emails are signatures and you would risk stripping legitimate information from the responses.
