Is there any way to find out which monitors are connected to a Raspberry Pi?
Display information doesn't show anything connected to it

Connected monitors are currently only scanned for Windows computers. As such, unless your Raspberry Pi is running Windows (which according to Google does seem possible), you'll not be able to scan connected monitors unfortunately.
