I assume that it is possible to have multiple "LS Servers" taking requests for scans that can all point back to just one database server?
So - assuming that the logon script has
lsclient server1
or
lsclient server2
in it the servers will scan the workstation and populate the data in one database on "sqlserver1".
Or...could this cause issues with data being duplicated / overwritten / mismatching / violating...?
I was thinking I would only need to install the service on the appropriate front end servers and nothing else - or am I way off the mark here?

This would work as you described.
Just point the lsclient to the nearest service and point the services to the database server.
You can only get in trouble when multiple services start scanning your client.
