I've noticed if I edit an individual asset field and select the "Lock from scanning" checkbox, the record stays as I've set it.
Unfortunately, using the Assets - Mass Edits Assets feature to document corrections seems to be only temporary. While it's easy to make many changes at once there doesn't appear to be a 'lock my edits from changing' option, so on the next rescan those assets may overwrite any of the mass edits.
